1 to 2 doz eggs well mixed in large skillet or mixing
bowl. Add 1/8 to 1/4 cup first cold pressed olive oil.
Veggies of your choice, fresh, frozen, sauteed. Cut up and add to egg mixture.
Brocolli, onions, carrots, celery, snap peas, green beans, squash, green/red peppers, fresh or frozen.
Drain off excess oil or moisture before adding to egg mixture.
Chopped or bits of your favorite cooked meat such
as chicken, beef, turkey, pork, lean ham, shrimp, etc. (Not deli meat)
1/2 to 1 cup or more shredded or chopped cheese, american, cheddar, hot
pepper, etc. (read label use real cheese, not velveeta or cheese food)
Salt and pepper to your taste. Separate and set aside as many slices of cheese
as it takes to completely cover top of skillet when cooked.
Stir and cook like scrambled eggs using low heat.
fully cooked remove from heat. Have cheese slices you have separated ready to quickly
cover top. Immediately place lid on skillet. Cheees will melt and completely cover
top of dish.
Cool and refrigerate.
